Hello my little Greenbeans! I have missed writing to you all so much lately! I know if have been MIA and the main reason is because I am working with my Health Counselor, Rachel Feldman, on my digestive issues and we are going full swing! I am finishing up my second week of no grains and to be honest, it wasn't hard at all! Tons of delicious juices, smoothies, salads, soups, fish and veggies galore! Below are some pictures of my latest meals that I can honestly say I will keep on making!
This salad had sauteed onions, asparagus and sardines on top of mixed greens with sliced cucumber with a lemon olive oil dressing!
This salad had grilled zucchini, asparagus, yellow peppers and shrimp on top of a mix of arugula, spinach and mixed greens with a mustard vinegar dressing!
The above soup is from Ani Phyo's book "15-Day Fat Blast". My friend Sharyn told me about this soup recipe and I have to say it took me less than 5 minutes and I am licking my lips! Here is the recipe:
Broccoli & Spinach Soup (Serves 1)
1 cup of water
1/4 cup of cashews
1/2 cup of broccoli
1 cup of spinach
2 tsp. of miso paste
1 tbsp. of dill
1 lime squeezed
Directions: Add all ingredients into a Vitamix and blend until slightly warm! Garnish with a sprig of dill for guests!
