Tantalizing Tuesday Treats!

I started off my morning with a delicious smoothie that I like to call the...

Summerfest Smoothie (Serves 1-2)

1 cup of watermelon

1/2 of a peeled cucumber

1 nectarine (pit discarded)

1/2 cup of blueberries

juice of 1 lime

5-6 ice cubes

Directions: Place everything in a blender and let it whirl! Enjoy a light refreshing taste!

This was a great start to a big day! Tonight I am going with my Mom and sisters to Westbury Manor for a Bridal Expo for Crystal!!! Maid of Honor duties!! Yay can't wait :)

Ok so let me rewind because last night I made homemade breadcrumbs that were gluten-free AND grain-free!! ohh yea!! I did it! I personally used them on flounder and sprinkled some over stringbeans, but you can get creative! You can use them to bread tofu, seitan, chicken, fish etc! Get down with the breadcrumbs because they are not only yummylicious they are super healthy packed with tons of proteins and vitamins!

Gluten-Free and Grain-Free Breadcrumbs (Makes approx 2.5 cups)

2 cups of Almond Meal

2 tbsp. of dried basil

2 tbsp. of dried parsley

1 tbsp. of paprika

2 tsp. of salt

1 tsp. of black pepper

1/4 cup of nutritional yeast (optional)

Directions: Mix all ingredients in a bowl and use it whichever way you want!

NOTE: If you can't find almond meal/flour you can make your own by putting almonds in a food processor. Just don't let the processor run for too long because then you will be making almond butter because the oils will release! To make almond flour is just a quick pulse! One day I will make them homemade and show you all how to do it!

 I know it is hard sometimes being gluten-free especially when you want some goodies! But I had to say that these breadcrumbs tasted salty and cheesy (from the nutritional yeast) and downright naughty!
